Marinades are to grilling what icing is to cake — grilled dishes are still pretty tasty on their own, but the added punch of a flavorful marinade can transform the merely good into great. Use the delicious marinade recipes included in this article, and follow our tips below for marinating success.

A dry rub can really add flavor without fat to grilled meats. A blend of dried herbs and spices such as rosemary, thyme, crushed red pepper, fennel seeds, garlic, dill and cracked peppercorns make excellent choices. If you want to add really deep flavor, try a liquid marinade that uses ingredients such as oil and vinegar, lemon juice, soy sauce, or Worcestershire sauce as its base, or you can buy prepared marinades at your local Big Y.

For marinating times in general, most meats need 1 to 3 hours to add flavor and up to 24 hours to tenderize. Poultry requires 1 to 3 hours to marinate and fish about 15 to 30 minutes. But because different cuts of meat, poultry and fish require different marinating times, you should use this as a general guide only and follow your recipe’s directions.
