So you’ve given your boss a two-week vacation notice to be with your kids at the seashore — nothing but sand, sun and water. And the friends that you hope will visit. Or maybe you aren’t venturing farther than your backyard, where your destination is the kiddie pool and the barbeque grill on the deck. Either way, you’ve remembered lots of sunscreen and beach towels, but how will you entertain those visitors? Answer: an old-fashioned New England clambake. And you don’t need to cross the Sagamore Bridge to Hyannisport to get it. The Essentials
• Buy a big lobster pot and toss in all the shellfish you can find at Big Y — clams, shrimp, scallops and lobster. See recipe on page 3.
• Side dishes: Don’t forget the veggies. Corn on the cob is wonderful steamed in chicken or clam broth or right in the same pot as your shellfish. Or how about some grilled red peppers stuffed with goat cheese and fresh basil, or zucchini sliced lengthwise and grilled. Tired of the same old green salads? You can also try couscous with chopped peppers, goat cheese, carrots or ginger.
• Be sure to have adequate shade and bags of ice to keep those side salads — macaroni and potato — safe from spoiling in the sun. And besides, that yummy coleslaw tastes best crispy cold, so don’t put it out on the picnic table until the rest of the food is ready.
• Keeping bugs away: Pick up some citrus or citronella candles, usually found in the same aisle as the briquettes.
• There’s nothing more delicious than homemade lemonade or sun-brewed iced tea. Simply slice a bag of lemons and let them sit in a big jar full of water and sugar (to taste). Or, put five tea bags in a glass container filled with water and leave it on the back deck the morning of the party. Voila! By 2 p.m. the tea is sun-brewed naturally.
• Fresh fruits are abundant this time of year. Berries are heavenly — big, plump and tasty fresh. Just toss them in a bowl and top them with some fresh whipped cream or vanilla ice cream for dessert.
