Make Your Pizza...Tops!
Not only is pizza delicious to eat, it’s also fun to make. Follow these tips to ensure your pizza turns out perfect from the toppings to the crust.

Always preheat your oven before baking pizza.
Dough cooks best — and makes for a sturdier crust — when it’s added to a hot pan. Prebake your pizza stone or dark pizza pan for at least 15 minutes before spreading dough onto it.
Before placing dough on your pan, rub or brush a thin layer (about 1 Tbsp.) of olive oil onto the pan's surface. The olive oil will prevent the dough from sticking to the pan and the dough will absorb some of its flavor as well.
Just as you would experiment with different pizza toppings, be imaginative with your dough. Sprinkle it with Italian seasonings; shake on garlic powder; spread some sesame seeds.
Prebake your pizza crust for a few minutes on the lowest rack in the oven before adding any sauce, cheese or toppings.
Go easy on the sauce so you don’t end up with a soggy pizza. A little will go a long way.
Be creative with your cheeses. It’s okay to move beyond mozzarella and mix different types of shredded cheese. Big Y’s International Cheese Shop carries a wide variety of imported and domestic cheeses that are perfect for your pizza.
You can top a pizza with virtually anything. But less is more, so do practice
some restraint with your toppings. Keep it light, and the flavors won’t
overwhelm or overpower each other.
If you’re adding fragile toppings that may wilt, such as herbs or salad greens, place them on the pizza after it has been removed from the oven.

What to do...with the dough!
The idea of working with dough may fill you with fear. But with patience, persistence and practice, anyone can prepare delicious dough. Follow these expert tips to help you along;

Once you’ve begun your dough, avoid unnecessary interruptions.
Stir yeast gently, and allow it ample time to become “active.”
Dough that is a bit on the wet side is easier to work with. Occasionally, add a dusting of flour to it to reduce stickiness, but be sure to go easy.
Kneading takes time. In order for your dough to rise fully, you’ll have to knead it for about 10 to 12 minutes.
You’ll know when the kneading is complete, because the dough will transform into a ball that has a smooth texture.
Give the dough time to rise — undisturbed — in a warm place such as an unlit oven. Do not alter the rising time in your recipe. It is required to allow the dough to rise and double in size.
Before spreading the dough, be sure your work surface, hands and rolling pin are sprinkled with flour.
Flatten out the dough with your hands before using a rolling pin.
The dough will be elastic at first, and you’ll find it tends to draw back into its original shape. Be patient and persistent and continue rolling until the dough loses its elasticity and relaxes.
Once you’ve transferred the dough onto your pan, press on it (starting from the center) to push out any air that is trapped between the dough and the pan.
