Quick and Easy Weeknight Meals
Your weeks are busier than ever. Work. School. Sports. Activities. When your family has so much going on, sometimes cooking weeknight dinners becomes a challenge. It’s easy to fall into the habit of grab-and-go munching in the car on the way to the next scheduled activity. But we have suggestions for you with some great-tasting meals you could easily toss together. Use our handy shopping list and it will take just one quick trip to the store for everything you’ll need to prepare these recipes.

Chicken Dippers
Prep Time: 10 minutes
Cook Time: 10 minutes

3 Tbsp. Big Y brown sugar
1 Tbsp. low-sodium soy sauce
1 Tbsp. Big Y honey
1 Tbsp. fresh ginger, minced
1 Tbsp. World Classics Trading Co. olive oil
1 garlic clove, minced
2 Big Y all-natural, boneless, skinless chicken breasts, cut into 1-inch cubes
– your favorite dipping sauces

In a small bowl, combine brown sugar, soy sauce, honey and ginger; set aside.
Heat oil in heavy skillet over medium-high heat; add garlic and chicken. Sauté
for 3 minutes or until chicken is about half cooked. Stir in the brown sugar mixture and continue to sauté over medium heat for about 7 minutes or until most of the liquid is evaporated and chicken is glazed and cooked through. Remove from heat. Serve with toothpicks and your favorite dipping sauces.
Makes 4 (1⁄2-breast) servings.

Oven-Baked Lemon Cod
Prep Time: 10 minutes
Cook Time: 20 minutes
1 1⁄2 lb. cod fillets, fresh from the
North Atlantic Fishing Co.
3 Tbsp. Big Y butter, melted
1 Tbsp. fresh lemon juice
1⁄2 cup Big Y all-purpose flour
1 Tbsp. Big Y paprika
1 tsp. Big Y salt
1 tsp. fresh ground pepper
1 tsp. finely grated lemon zest
Preheat oven to 450??qF.

Cut fillets into four serving-size pieces.
In a small bowl, combine butter and lemon juice. In a shallow pan, combine flour, paprika, salt and pepper. Dip fish into butter mixture,
then coat fish with flour mixture; top with lemon zest.
Place fish in an ungreased, square baking dish and cook uncovered
for 15 to 20 minutes or until fish flakes easily with fork.
Makes 4 (approximately 6-oz.) servings.

Meatloaf Muffins
Prep Time: 15 minutes
Cook Time: 23 minutes
2 Big Y eggs
1 1⁄2 cups Big Y pizza sauce, divided
3⁄4 cup Big Y seasoned bread crumbs
1 tsp. dried oregano
1 packet Big Y onion soup mix
1 1⁄2 lb. lean ground beef, fresh from the Big Y Butcher Shop
– Big Y nonstick cooking spray
1 cup Big Y shredded mozzarella cheese

Preheat oven to 375??qF.
In a large bowl, combine eggs, 1 cup pizza sauce, bread crumbs, oregano and soup mix. Crumble raw beef over mixture and mix well.
Coat 9 muffin cups with cooking spray.
Divide beef mixture among the 9 muffin cups, making sure to press onto
the bottom and up the sides of the muffin cups. Using the tip of a spoon, make an indentation in the middle of each and fill with cheese; smooth the indentation closed, covering the cheese. Bake for 15 to 18 minutes or until meat is no longer pink. Brush with remaining pizza sauce and return to oven for an additional 5 minutes.
Makes 9 (1-muffin) servings.
