Your Between-Holidays Meal Solutions
There’s a reason it’s called the “holiday season.” While it’s all too easy to keep your focus mainly on the Big Days, there’s an entire month in between that’s often filled with parties both planned and impromptu. But while you’re getting ready for the holidays, you still have to go on with your everyday life…and that includes preparing dinner for your family each evening! We’ve taken the worry out of your between-holidays meal planning with these in-a-flash, simple suppers. Each one goes from the kitchen (or freezer) to the table in 60 minutes or less, leaving you with plenty of time to enjoy every day of the season.
Jumbo Shrimp with Tomatoes and Feta
Tip: To serve this recipe in a snap, you can make the soup base up to
2 days ahead of time and store it in the refrigerator. When ready to use, add shrimp, tomatoes and feta and bake according to the recipe directions.
Tip: Can be made up to 2 days ahead. Cool slightly then chill uncovered until
cold. Cover with foil and refrigerate. Bring to simmer over medium heat for
15 minutes before serving. Or freeze it in an air-tight
container for up to 1 month. Just thaw and reheat.
Tip: Once you have assembled the lasagna, cover tightly with plastic wrap and then aluminum foil; place in the freezer for up to 3 months. To bake, remove plastic wrap and cover with foil that has been lightly coated with cooking spray. Bake in a 375°F oven for 1 hour. Remove foil and bake for an additional 20 minutes or until hot and bubbling. Let cool for 10 minutes before serving.
