Its rich, signature cheddar flavor and silken texture come from 12 months of careful aging.
Aged for two to three months, mild cheddar has a smooth, creamy flavor and consistency. Mild can substitute for Monterey Jack cheese - which we also make and even better than you get in California!
Aged for at least eight months, this cheddar has a full, well-developed flavor with just the right degree of sharpness to satisfy real cheese lovers.
Aged over one year, extra sharp has reached a flavor that separates Cabot from all other brands.
Aged at least 16 months, Private Stock is an extraordinarily fine, clean flavored extra sharp cheddar. This cheddar is hand-tended and closely monitored from among the extra sharp stock to rank in this category.
Aged for at least two years, our president selects the cheddar going into this limited category. Available only in waxed bricks.
