The USDA grades beef for tenderness and flavor. A marbling score is used to identify the best beef. The beef with the best marbling is graded USDA Prime and USDA Choice. The lower grade Select has very little marbling.
It's the marbling (interior fat) that adds the great beef flavor and makes for a more tender and juicy steak every time.
